Ingredients
- 1 1/2 pounds skinless chicken breasts
- Whole Wheat pitas or Whole Wheat Naan Bread
- 1 Container Yogurt Cucumber sauce – Pre-made ( Whole Foods or Trader Joe’s)
- 1 Large Tomato diced
- 1/2 Red Onion in thin slices
Preparation
Chicken gyros have multiple steps. First you must marinade the chicken.
Lemon Marinade for Chicken
Ingredients
- 1/2 cup extra virgin olive oil
- 1/2 cup lemon juice
- 1 tbsp lemon zest
- 1/2 tbsp kosher salt or sea salt
- 1 tsp ground black pepper
- 4 large cloves garlic, peeled and roughly chopped
Put all ingredients into a blender or food processor until liquids are fully combined and garlic is well pureed. Mixture should be opaque and fairly thick. Pour over chicken and marinade for 4 or more hours.
Grill chicken either outdoors or on an inside grill until no longer pink. Cut chicken up into bite sized pieces.
Assemble Gyros
Lay out Pita or Naan. Stuff with Chicken
Top chicken with yogurt sauce , tomato, and onion. Enjoy!!!
